Why casein forms a clot in the stomach
Casein is the dominant protein in milk and is acid-sensitive. When it meets the low pH of the stomach it coagulates into a soft clot, which slows gastric emptying. Amino acids are then released into the bloodstream gradually over several hours rather than in a single early spike, the behavior that earns it the slow-release label.
This contrasts with whey, which stays soluble in acid and empties quickly.
