What the main additive classes actually do
Food additives are grouped by function rather than chemistry. Emulsifiers (such as lecithin or polysorbates) keep oil and water phases mixed; preservatives (such as sorbates, benzoates, or nitrites) slow microbial growth or oxidation; colours restore or standardise appearance; sweeteners replace sugar; and gums and stabilisers (such as xanthan or carrageenan) control texture and prevent separation.
Most additives in widespread use have passed regulatory safety review by bodies such as the EFSA in Europe and the FDA in the United States, which set acceptable daily intake levels with safety margins built in. Approval reflects evidence available at the time and is periodically revisited.
Emerging questions about emulsifiers and the gut
Some emulsifiers and stabilisers have drawn newer scientific attention for possible effects on the gut microbiome and intestinal lining. Much of this evidence comes from animal and cell studies, with human data still limited and inconsistent, so the findings are best read as preliminary signals rather than established harms.
