Folds multiply layers exponentially in laminated dough
Laminated doughs (croissants, Danish, puff pastry) build flaky layers by repeatedly folding butter into dough. Each fold doubles the number of butter-flour interfaces. Starting with one sheet, a single fold creates two layers, two folds make four, three folds make eight. A full croissant recipe typically includes four or five folds, yielding 16-32 theoretical layers, though some stick together during baking, reducing the final count.
The number of folds determines how many distinct flaky sheets appear in the finished pastry. More folds create thinner, more numerous layers and a more delicate, shattered texture. Fewer folds produce thicker, chewier layers and a softer bite.
Different pastries use different fold counts for texture goals
Classic croissants use four folds to achieve around 24-32 layers, creating the light, crispy texture expected. Danish dough often uses three folds (8-16 layers) for a slightly chewier, more forgiving crumb. Puff pastry for savory applications might use five folds (32+ layers) for maximum shatter and delicacy. The choice balances delicacy against durability: very thin layers collapse easily if the pastry sits too long or is handled roughly.
